Now that I am finally back home, I need to bring my pickle brine back to life. My friend Debbi was kind enough to stay in my flat and take care of my plants while I was home for the holidays so the brine didn’t die. But just because it’s not dead doesn’t mean that my colony of microbes isn’t in hibernation.
So I am going to do three things to help bring my pickles back to their awesome flavourful state.
The first is to pull out the radishes that have been waiting for me for months.
This will leave me the space for fresh, prepped veg.
From my online research, the first batch back might not be the best, so it’s going to be a smaller batch. I’m going to get some more aromatics to kick the flavour back up and give the little guys something to feast on. I’ll also chuck in some lump sugar for them to feed on as well. I’m hoping that in about a week, it will be back to the yummy living brine that I had when I left.
Gotta keep that brine alive.
